What it means
"zbx run -e NAME=VALUE" sets a variable in the container, and "-e NAME" copies it from zbx's own environment. The option you gave is neither: the name must be a letter or underscore followed by letters, digits and underscores (at most 64 of them), a name may be set once, and a run takes at most 16 of them. The image's own variables and yours together are at most 64.
zbx never prints or stores a value, so the message names the variable only. The run record, "zbx ps" and a bundle list the names that -e set, never what they were set to. Remember that your shell, and the process list of this machine while zbx runs, can still show the command line: "-e NAME" with the value in the environment keeps it off both.
